About Me

I am a home cook and a culinary nomad, meaning I don’t like to have a comfort zone. I am always looking for new things to try and different ways of using the meat I hunt, the fish I catch and the foods I forage. I am a lover of offal and odd bits from any animal I can get. I love sneaking spam into dinners and seeing how people react to it. Although I love beef I have almost eliminated it from my family’s diet using venison 90 % of the time, but the occasional beef cheek and rib eye steak do make an appearance from time to time. I am an RN at the Minneapolis VA and live in Burnsville Minnesota with my wife and two kids, and hopefully a dog someday. You Have to Cook It Right is a collection of recipes and stories detailing my journey to make wild foods an everyday part of my family's diet.
